Egg Boss

Handmade scotch eggs by Chef Lawson

London

Love Eggs? Yes I do.

I've travelled our great nation from tip to tip, from the North East to the South West, and there's only one small, round thing that brings everyone together and it's not football: it's the noble Scotch Egg.

I've been making them for years, and not just the traditional style of egg, sausage meat and breadcrumbs. I consider it the Swiss Army Knife of food, a template if you will, to create a treat for all tastes.

I'm on a mission to reinvent and reintroduce this little bit of heaven to every dinner table in Britain, using fowl means or fayre. I use free range eggs from chickens, geese, ducks and even ostriches. I then find ways of creating something new by getting inspiration from the far-flung corners of the Earth. From Merguez to Marmite and Vindaloo to Veggie, if you can think it, I can make it for you. After all, I am the Egg Boss.

I've cooked for Royalty, from both Hollyrood and Hollywood, making my Scotch Eggs fit for Kings, Queens, Divas and Directors. So, if you'd like to try something different, come and find me at Brockley Market on Lewisham Way, or the Stock Market in Bermondsey Square. There'll be six flavours to choose from, each with a name that's as wonderful as the flavour: come and see if you can guess what's in a ‘Holy Fuck', or an ‘It's so Wrong'.

I dare you.
